Did you know that espresso has less caffeine than drip coffee? The rapid brewing time of espresso leaves more of the caffeine and acid in the grounds. The longer the grounds are subjected to water, the more soluble the caffeine and acids become. Now you know why old-fashioned percolator coffee is generally bitter.
